How To Make Vegan Fry-Up

Turning vegan may look challenging for some, especially for those who can’t turn their eyes away from meat. But they just haven’t found these sumptuous vegan recipes that even non-vegans will surely enjoy!

Serves:

Ingredients

  • 2 cups of canned chickpeas, drained and rinsed
  • 1 cup of sliced mushrooms
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 small red onion, sliced
  • 2 tablespoons of olive oil
  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of turmeric
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the sliced mushrooms, bell pepper, zucchini, and red onion to the skillet. Saute until the vegetables are tender, about 5-7 minutes.

  3. Add the chickpeas to the skillet and sprinkle with smoked paprika, turmeric, salt, and pepper. Stir well to coat the chickpeas and vegetables with the spices. Cook for an additional 5 minutes.

  4. Remove from heat and garnish with fresh parsley.

  5. Serve the vegan fry-up hot with toast or vegan sausages.
