How To Make Vegan Key Lime Pie Recipe

A zesty, creamy and refreshing dessert perfect for summer.

Total: 35 minutes plus cooling and chilling time

Serves:

Ingredients

  • 1 1/4 cup of digestive biscuits, crushed
  • 1/3 cup of vegan butter, melted
  • 1/4 cup of coconut oil
  • 1 can of coconut cream (13.5 oz)
  • 1/2 cup of fresh lime juice
  • 1 tbsp of lime zest
  • 1/2 cup of agave syrup
  • 1/4 tsp of salt

Instructions

  1. Preheat oven to 180°C (350°F).

  2. Mix the crushed biscuits, melted vegan butter, and 1/8 tsp of salt in a bowl.

  3. Press the mixture into a 9-inch pie dish and bake for 10 minutes. Let it cool down.

  4. In a saucepan, melt the coconut oil and add the coconut cream, lime juice, lime zest, agave syrup and the remaining salt. Whisk everything together and cook on low heat for 5 minutes.

  5. Pour the lime mixture into the cooled crust and chill in the fridge for at least 4 hours.

  6. Serve chilled with whipped coconut cream and extra lime zest.
