A delicious plant-based dish layered with juicy tomatoes, fresh basil, and a savory vegan cheese sauce.

Ingredients

  • 4 large tomatoes, sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1 cup vegan cheese sauce
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.

  2. In a baking dish, layer sliced tomatoes and chopped basil.

  3. Pour vegan cheese sauce over tomato and basil mixture.

  4. In a small bowl, mix breadcrumbs, olive oil, and salt and pepper. Sprinkle this mixture over the top of the casserole.

  5. Bake for 40 minutes or until the topping is golden brown and the tomatoes are cooked.

  6. Let the casserole cool for 5-10 minutes before serving.
