How To Make Vegan Fajitas

Delicious and flavorful vegan fajitas loaded with sautéed peppers, onions, and protein-packed tofu.

Serves:

Ingredients

  • 1 block of tofu, drained and pressed
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1/2 teaspoon of garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Optional toppings: avocado, salsa, vegan sour cream

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced bell peppers and onion, sauté until tender, about 5 minutes.

  2. In the meantime, drain and press the tofu to remove excess water. Crumble the tofu into bite-sized pieces.

  3. Push the veggies to one side of the skillet and add in the crumbled tofu. Cook for 5 minutes, stirring occasionally.

  4. Add in the minced garlic, chili powder, cumin, paprika, garlic powder, salt, and pepper. Stir well to coat the tofu and veggies evenly. Cook for 2-3 minutes more.

  5. Warm the flour tortillas and divide the tofu and veggie mixture evenly among them.

  6. Serve with your favorite toppings such as avocado, salsa, or vegan sour cream.
