How To Make Vegan Sweet Potato Casserole
Creamy and delicious sweet potato casserole topped with crunchy pecans.

Ingredients
- 2 medium sweet potatoes, peeled and chopped into cubes
- 1/4 cup almond milk
- 2 tbsp vegan butter
- 1/4 cup maple syrup
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped pecans
Instructions

Preheat oven to 375°F (190°C).

In a pot, boil the sweet potatoes until tender.

Drain the water and mash the sweet potatoes with a fork.

Add almond milk, vegan butter, maple syrup, cinnamon, nutmeg and salt to the mashed sweet potatoes. Mix well.

Place the mixture into a casserole dish and sprinkle the pecans on top.

Bake for 30-35 minutes, until the pecans are golden brown.
