How To Make Vegan Sweet Potato Casserole

Creamy and delicious sweet potato casserole topped with crunchy pecans.

Ingredients

  • 2 medium sweet potatoes, peeled and chopped into cubes
  • 1/4 cup almond milk
  • 2 tbsp vegan butter
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a pot, boil the sweet potatoes until tender.

  3. Drain the water and mash the sweet potatoes with a fork.

  4. Add almond milk, vegan butter, maple syrup, cinnamon, nutmeg and salt to the mashed sweet potatoes. Mix well.

  5. Place the mixture into a casserole dish and sprinkle the pecans on top.

  6. Bake for 30-35 minutes, until the pecans are golden brown.
