Ingredients

  • 1 tbsp of olive oil
  • 1 red onion, chopped
  • 2 garlic cloves, minced
  • 2 bell peppers, cut into strips
  • 2 cups of broccoli florets
  • 1 zucchini, chopped
  • 1 tsp of ginger, grated
  • 1 tbsp of low sodium soy sauce
  • 1 tbsp of honey
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat the olive oil in a wok or large skillet over medium-high heat.

  2. Add the onion and garlic, and cook until fragrant, stirring occasionally, for about 2-3 minutes.

  3. Add the bell peppers, broccoli, and zucchini, and continue to cook for another 5-7 minutes, until the vegetables are tender yet crisp.

  4. Add the ginger and season with salt and pepper. Cook for another minute or so.

  5. In a small bowl, whisk together the soy sauce and honey. Pour the sauce over the vegetables and stir well.

  6. Cook for another minute or so to let the sauce thicken and coat the veggies.

  7. Garnish with fresh cilantro, and serve hot with brown rice or quinoa.
