  • 8 eggs
  • 1/4 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheese (optional)
  • Chopped fresh herbs (optional)

Instructions

  1. In a microwave-safe bowl, crack the eggs and whisk them together.

  2. Stir in the milk, salt, and black pepper.

  3. Microwave the mixture on high for 1 minute, then stir.

  4. Return to the microwave and cook in 30-second intervals, stirring in between, until the eggs are just set.

  5. If desired, sprinkle cheese on top and microwave for another 30 seconds until melted.

  6. Garnish with fresh herbs, if using, and serve hot.
