How To Make Zucchini Soup Recipe

A comforting and healthy soup made with fresh zucchinis and aromatic herbs.

Ingredients

  • 4 zucchinis, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups of vegetable or chicken broth
  • 1/2 cup of heavy cream
  • 2 tbsp of fresh thyme leaves
  • Salt and pepper
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté for 2-3 minutes.

  2. Add zucchinis to the pot, sprinkle some salt and cook for 5-7 minutes until they are soft.

  3. Pour in the broth and bring it to a boil. Reduce the heat and let it simmer for 10 minutes.

  4. Remove the pot from the heat and blend the soup until smooth, using an immersion blender or transferring it to a blender.

  5. Return the soup to the pot and add the heavy cream and thyme. Season with salt and pepper and stir until well combined.

  6. Reheat the soup over medium heat, stirring occasionally, until it is hot. Serve with some fresh thyme leaves on top.
