Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • ¾ cup uncooked barley
  • 4 cups vegetable broth
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt, to taste
  • black pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.

  2. Add onion and garlic, and sauté until softened.

  3. Add mushrooms and cook until tender.

  4. Add barley, vegetable broth, soy sauce, thyme, oregano, salt, and pepper to the pot. Bring to a boil.

  5. Reduce heat and let simmer for 45-50 minutes, stirring occasionally, until barley is tender and soup is thickened.

  6. Serve hot and enjoy!
