How To Make Tomato Basil Soup Recipe

A classic tomato soup recipe with fresh basil and cream.

Serves:

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups canned tomatoes
  • 2 cups vegetable broth
  • 1/2 cup fresh basil leaves, chopped
  • salt and pepper, to taste
  • 1/2 cup heavy cream

Instructions

  1. In a large pot or Dutch oven, melt butter over medium heat.

  2. Add onion and garlic, and cook until onion is translucent.

  3. Add canned tomatoes, vegetable broth, basil, salt, and pepper.

  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.

  5. Use an immersion blender or transfer soup to a blender and blend until smooth.

  6. Stir in heavy cream.

  7. Serve hot and garnish with additional fresh basil leaves.
