How To Make Black Bean Soup

A hearty and healthy soup made with black beans and vegetables.

Serves:

Ingredients

  • 2 cans of black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 tbsp of olive oil
  • 1 tsp of cumin
  • ½ tsp of chili powder
  • 4 cups of vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the onion, garlic, and red bell pepper and cook until softened.

  3. Add the cumin and chili powder and cook for another minute.

  4. Add the black beans and vegetable broth to the pot and bring to a boil.

  5. Reduce heat and simmer for 20 minutes.

  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  7. Season with salt and pepper, if needed.
