  • 1 can pumpkin puree
  • 1/2 cup low-fat milk
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp allspice
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, whisk together pumpkin puree, milk, and maple syrup.

  3. Add eggs, cinnamon, nutmeg, ginger, allspice, and salt. Whisk until well combined.

  4. Pour pumpkin custard mixture into 4 ramekins.

  5. Bake for 45 minutes, or until the edges are set and the center is slightly jiggly.

  6. Remove from oven and cool on a wire rack for 15 minutes.

  7. Serve pumpkin custard topped with whipped cream and a sprinkle of cinnamon.
