Ingredients

  • 1 lb flank steak
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • 1/4 cup crumbled blue cheese
  • 1 avocado, sliced
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Heat a large skillet over medium-high heat. Season the steak with salt and pepper and cook for 4-5 minutes per side, or until desired doneness is reached. Let rest for 5-10 minutes before slicing thinly.

  2. In a large bowl, combine the mixed greens, cherry tomatoes, red onion, blue cheese, and avocado.

  3. In a small bowl, whisk together the olive oil and balsamic vinegar. Season with salt and pepper to taste.

  4. Toss the salad with the dressing and divide among 4 plates. Top with the sliced steak and serve immediately.
