Ingredients

  • 1 1/2 cups gluten-free flour blend
  • 1/2 cup tapioca flour
  • 1/4 cup almond flour
  • 1/4 cup ground flaxseed
  • 1 tbsp active dry yeast
  • 1 tsp salt
  • 1 tbsp honey
  • 1 cup warm water
  • 2 eggs
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine gluten-free flour blend, tapioca flour, almond flour, ground flaxseed, active dry yeast, and salt.

  3. In a separate bowl, whisk together honey, warm water, eggs, and olive oil.

  4. Pour the wet ingredients into the dry ingredients and mix until well combined.

  5. Pour the batter into a greased 9×5 inch loaf pan and smooth the top with a spatula.

  6. Bake for 1 hour or until a toothpick comes out clean.

  7. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
