Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/3 cup butter, melted
  • 2 eggs
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3 tbsp erythritol
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine almond flour, coconut flour, melted butter, erythritol, baking powder, and salt. Mix well to form a dough.

  3. Press the dough into the bottom of 8×8 inch baking dish and bake for 10 minutes.

  4. In another mixing bowl, beat eggs together.

  5. Add lemon juice, lemon zest, and mix well.

  6. Pour the mixture over the crust and bake for another 15 minutes.

  7. Let it cool and cut into bars before serving.
