  • 2 ripe bananas, mashed
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine mashed bananas, eggs, and vanilla extract.
  3. In another mixing bowl, whisk together almond flour, baking powder, baking soda, and salt.
  4. Mix wet and dry ingredients until well combined.
  5. Grease muffin tins with coconut oil and divide batter evenly among them.
  6. Bake for 20-25 minutes or until golden brown and toothpick comes out clean.
  7. Remove from oven and let cool before serving.
