Ingredients

  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 3 bell peppers, sliced into strips
  • 1 large onion, sliced into strips
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • juice of 1 lime
  • 8-10 corn tortillas

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add chicken and cook until browned on both sides, about 5-7 minutes.

  3. Add peppers, onions, and garlic to skillet with chicken and continue cooking until vegetables are tender and chicken is cooked through, about 10-12 minutes.

  4. Add chili powder, paprika, cumin, salt, black pepper, and lime juice to the skillet. Stir to combine and continue cooking for an additional 2-3 minutes.

  5. Warm tortillas in a separate skillet over medium heat.

  6. Serve chicken and vegetable mixture on warm tortillas.
