Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 flax eggs (2 tbsp ground flaxseed mixed with 6 tbsp water)
  • 1 tsp vanilla extract
  • 2 cups shredded carrots

Instructions

  1. Preheat oven to 350°F.

  2. In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In a separate bowl, whisk together oil, sugar, flax eggs, and vanilla extract until well combined.

  4. Fold in shredded carrots.

  5. Gradually stir in flour mixture until just combined.

  6. Pour batter into greased cake pan and bake for 25 minutes or until a toothpick inserted comes out clean.

  7. Let cool completely before serving.
