Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1 cup almond milk
  • 1/4 cup Greek yogurt
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup chopped walnuts
  • 1/4 cup raisins
  • Optional toppings: shredded coconut, grated carrots, chopped walnuts

Instructions

  1. In a large bowl, mix together the oats, grated carrots, almond milk, Greek yogurt, maple syrup, vanilla extract, cinnamon, and nutmeg.

  2. Stir in the chopped walnuts and raisins.

  3. Cover the bowl with plastic wrap and let it sit in the refrigerator overnight.

  4. In the morning, give the oats a good stir. If desired, add more almond milk for a creamier consistency.

  5. Divide the overnight oats into bowls and top with shredded coconut, grated carrots, and chopped walnuts, if desired.
