Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk
  • 1 carrot, grated
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 2 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a medium saucepan, bring the almond milk to a simmer.

  2. Stir in the rolled oats, grated carrot, raisins, chopped walnuts, maple syrup, cinnamon, nutmeg, vanilla extract, and salt.

  3. Cook over medium heat, stirring occasionally, for about 10-12 minutes or until the porridge thickens and the oats are cooked.

  4. Remove from heat and let it cool for a few minutes before serving.

  5. Serve the carrot cake porridge warm and enjoy!
