Basic Shortcrust Pastry Recipe

How To Make Basic Shortcrust Pastry

This is a simple and versatile pastry that can be used for pies, tarts, and quiches.

Ingredients

  • 250g all-purpose flour
  • 125g unsalted butter, cold and cubed
  • 1/2 tsp salt
  • 1 large egg
  • 2-3 tbsp ice water

Instructions

  1. In a large bowl, mix the flour and salt together.

  2. Add the cold butter and rub it into the flour using your fingertips until the mixture resembles breadcrumbs.

  3. Beat the egg lightly and add it to the mixture. Mix until the dough starts to come together.

  4. Gradually add the ice water, one tablespoon at a time, until the dough forms a ball. Be careful not to overmix.

  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

  6. Preheat the oven to 180°C (350°F).

  7. On a lightly floured surface, roll out the pastry to fit your desired dish.

  8. Carefully transfer the pastry to the dish, pressing it gently into the corners.

  9. Trim off any excess pastry and prick the base with a fork.

  10. Bake in the preheated oven for 15-20 minutes, or until lightly golden.

  11. Allow the pastry to cool before filling with your desired filling.
