How To Make Santa’s Mince Pie Diamonds

What better way to get you in a happy mood than having a slice of pie? These baked dishes are perfect for those who can’t get enough of flaky pastries. From an apple variant to a lemon meringue, these pies pastries recipes will satisfy your pie and pastry cravings.

Ingredients

  • 1 pack of ready-made shortcrust pastry
  • 200g mincemeat
  • 1 egg, beaten
  • Icing sugar, for dusting

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the shortcrust pastry on a floured surface and cut out diamond shapes using a cookie cutter.

  3. Spoon a tablespoon of mincemeat onto half of the diamond-shaped pastry pieces.

  4. Brush the edges of the pastry with beaten egg and place another diamond-shaped pastry piece on top. Press the edges to seal.

  5. Place the mince pie diamonds on a baking tray and brush the tops with beaten egg.

  6. Bake in the preheated oven for 20-25 minutes until golden brown.

  7. Remove from the oven and let them cool completely.

  8. Dust with icing sugar before serving.
