Ingredients

  • 1 cup chickpea flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric
  • 1 cup water
  • 1 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped tomatoes
  • 2 tbsp chopped fresh cilantro

Instructions

  1. In a large mixing bowl, sift together chickpea flour, baking powder, salt, cumin powder, and turmeric.

  2. Slowly whisk in 1 cup of water to make a smooth batter without lumps.

  3. Heat a non-stick skillet over medium-high heat. Brush some oil using a brush or a paper towel.

  4. Pour 1/4 cup batter onto the skillet. Cook for 2-3 minutes until bubbles appear then flip and cook for another minute.

  5. Repeat with the remaining batter.

  6. Top with onions, tomatoes, and cilantro.
