How To Make Chickpea Flour Quiche Recipe
A gluten-free and vegetarian quiche made with chickpea flour and filled with vegetables and cheese.

Ingredients
- 1 cup chickpea flour
- 1 cup water
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp dried thyme
- 2 tbsp olive oil
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 cup chopped spinach
- 1/2 cup shredded cheddar cheese
Instructions

Preheat oven to 375°F.

In a bowl, whisk together chickpea flour, water, salt, black pepper, and dried thyme until smooth.

Heat olive oil in a skillet over medium heat and cook onions, bell pepper, and spinach until soft.

Pour the chickpea flour mixture into the skillet and stir to combine.

Sprinkle shredded cheddar cheese on top of the mixture.

Bake in the oven for 30-35 minutes, or until the quiche is golden brown and set.

Let cool for 5-10 minutes before slicing and serving.
