  • 4 white fish fillets (such as cod or haddock)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pitted black olives, sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Arrange the fish fillets in a baking dish and season with salt and pepper.

  3. In a bowl, mix together the cherry tomatoes, black olives, parsley, and olive oil.

  4. Spoon the tomato mixture over the fish fillets, covering them evenly.

  5. Sprinkle the grated Parmesan cheese on top.

  6. Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and the topping is golden and crispy.

  7. Serve hot with a side of steamed vegetables or crusty bread.
