Mackerel Sushi Rolls Recipe

Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 sheets sushi nori
  • 8 oz fresh mackerel, sliced
  • Wasabi paste, for serving
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice in cold water until the water runs clear. Drain and transfer to a pot. Add water and bring to a boil. Reduce heat to low and simmer, covered, for 18-20 minutes.

  2. In a small saucepan, combine rice vinegar, sugar, and salt. Heat over medium heat until the sugar dissolves. Remove from heat.

  3. Once the rice is cooked, remove from heat and let it sit for 10 minutes. Gently fluff the rice with a fork and add the rice vinegar mixture. Stir gently to combine.

  4. Place a sheet of sushi nori on a bamboo sushi mat. Spread an even layer of rice onto the nori, leaving a 1-inch border on the top edge.

  5. Arrange mackerel slices on top of the rice. Using the sushi mat, roll up the sushi tightly, using the border of rice to seal the roll.

  6. Repeat with remaining nori and filling ingredients.

  7. Slice each roll into 8 pieces and serve with wasabi paste and soy sauce.
