Ingredients

  • 1/2 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 small head cabbage, thinly sliced
  • 1 large Granny Smith apple, cored and thinly sliced
  • 1/2 red onion, thinly sliced
  • 8 oz. herring fillets, drained and chopped
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a small bowl, whisk together the mayonnaise, vinegar, honey, salt, and pepper.

  2. In a large bowl, toss together the cabbage, apple, and red onion.

  3. Add the dressing and toss to combine.

  4. Fold in the herring and parsley.

  5. Serve chilled.
