Ingredients
- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 small head cabbage, thinly sliced
- 1 large Granny Smith apple, cored and thinly sliced
- 1/2 red onion, thinly sliced
- 8 oz. herring fillets, drained and chopped
- 2 tbsp chopped fresh parsley
Instructions

In a small bowl, whisk together the mayonnaise, vinegar, honey, salt, and pepper.

In a large bowl, toss together the cabbage, apple, and red onion.

Add the dressing and toss to combine.

Fold in the herring and parsley.
