How To Make Chicken and Sausage Gumbo Recipe
A spicy cajun gumbo made with juicy chicken and savory sausage that’s perfect for a family dinner.

Ingredients
- 2 tbsp vegetable oil
- 1 lb chicken breast, cut into bite-sized pieces
- 1 lb Andouille sausage, sliced
- 1 cup chopped onion
- 1 cup chopped celery
- 1 cup chopped green bell pepper
- 3 cloves garlic, minced
- 1/2 tsp dried thyme
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 cup flour
- 6 cups chicken broth
- 1 cup chopped okra
- 2 bay leaves
- Salt and pepper, to taste
- Cooked white rice, for serving
- Chopped green onions, for garnish
Instructions

Heat the oil in a Dutch oven over medium-high heat. Add the chicken and sausage, and cook until browned. Remove with a slotted spoon and set aside.

Add the onion, celery, and green bell pepper to the same pot. Cook until the vegetables are soft and the onion is translucent.

Add the garlic, thyme, paprika, and cayenne pepper. Cook for 1 more minute, stirring frequently.

Sprinkle the flour over the vegetables and stir well to combine. Cook for 3-4 minutes, stirring constantly, until the flour begins to brown.

Slowly pour in the chicken broth, whisking constantly to prevent lumps from forming. Add the okra, bay leaves, chicken, and sausage back into the pot.

Season with salt and pepper to taste. Bring to a simmer, cover, and cook for 1 hour, stirring occasionally.

Remove the bay leaves and serve over cooked white rice. Garnish with chopped green onions.
