  • 4 cups water
  • 1 cinnamon stick

  • 1 cup milk
  • Ice cubes (for serving)
  • Ground cinnamon (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear.

  2. In a blender, combine the rice, water, and cinnamon stick. Blend until the rice is finely ground.

  3. Let the rice mixture sit at room temperature for at least 4 hours or overnight.

  4. Strain the rice mixture through a fine-mesh sieve or cheesecloth into a pitcher. Discard the rice solids.

  5. Stir in the sugar, vanilla extract, and milk until well combined. Refrigerate until chilled.

  6. To serve, pour the horchata over ice cubes and garnish with a sprinkle of ground cinnamon.
