- 1 cup long-grain white rice
- 4 cups water
- 1 cinnamon stick
- 1/4 cup sugar
- 1 tsp vanilla extract
- 1 cup milk (optional)
- Ice cubes (for serving)
- Ground cinnamon (for garnish)
Instructions

In a blender, combine the rice, water, and cinnamon stick. Blend until the mixture is smooth and well combined.

Pour the rice mixture through a fine-mesh sieve into a pitcher or large bowl. Use a spoon to press down on the rice solids to extract as much liquid as possible.

Discard the remaining rice solids and stir in the sugar and vanilla extract until dissolved. If desired, stir in the milk for a creamier texture.

Chill the horchata in the refrigerator for at least 2 hours, or until cold.
