Ingredients

  • 1 cup long-grain white rice
  • 4 cups water
  • 1 cinnamon stick
  • 1/4 cup sugar
  • 1/2 tsp vanilla extract
  • Ice cubes, for serving
  • Ground cinnamon, for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.

  2. In a blender, combine the rinsed rice, water, cinnamon stick, sugar, and vanilla extract.

  3. Blend until the mixture is smooth and creamy, about 2-3 minutes.

  4. Place a fine-mesh sieve over a large bowl and pour the rice mixture through the sieve, pressing on the solids with the back of a spoon to extract as much liquid as possible.

  5. Discard the solids and refrigerate the horchata for at least 1 hour.

  6. To serve, fill glasses with ice cubes and pour the chilled horchata over the ice.

  7. Garnish with a sprinkle of ground cinnamon and enjoy!
