  • 1 cup sugar
  • 4 cups carbonated water
  • 2 limes, juiced
  • Ice cubes, for serving
  • Lime slices, for garnish
  • Fresh mint leaves, for garnish

Instructions

  1. In a small saucepan, combine the grated ginger, water, and sugar. Bring to a boil and let simmer for 15 minutes.

  2. Remove from heat and strain the ginger syrup into a bowl, discarding the solid ginger pieces.

  3. In a pitcher, combine the ginger syrup, carbonated water, and lime juice. Stir well to combine.

  4. Fill serving glasses with ice cubes and pour the ginger beer over the ice.

  5. Garnish with lime slices and fresh mint leaves.
