  • 4 ripe pears, peeled, cored, and sliced
  • 1 cup almond meal
  • 1/2 cup granulated sugar
  • 4 egg whites
  • 1/2 teaspoon cream of tartar
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sliced almonds, toasted

Instructions

  1. Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine almond meal and granulated sugar.

  3. In a separate bowl, beat egg whites until frothy, add cream of tartar, and continue to beat until stiff peaks form.

  4. Gently fold the almond mixture into the beaten egg whites.

  5. Spoon the meringue mixture onto the prepared baking sheet, forming a circle about 8 inches in diameter.

  6. Bake for 1 hour and 30 minutes or until the meringue is crisp and dry. Allow to cool completely.

  7. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

  8. To assemble the trifle, layer sliced pears, almond meringues, and whipped cream in individual serving glasses or a trifle dish.

  9. Repeat the layers and finish with a dollop of whipped cream on top.

  10. Sprinkle with toasted sliced almonds before serving.
