How To Make Pineapple & Ginger Pavlova

Ingredients
- 4 egg whites
- 1 cup granulated sugar
- 1 tsp cornstarch
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1 cup diced fresh pineapple
- 1 tbsp freshly grated ginger
- 1 tbsp powdered sugar
- Whipped cream, for serving
- Fresh mint leaves, for garnish
Instructions

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean, dry mixing bowl, beat the egg whites until stiff peaks form.

Gradually add the granulated sugar, cornstarch, white vinegar, and vanilla extract while continuing to beat until the mixture is glossy and forms stiff peaks.

Spoon the meringue onto the prepared baking sheet, shaping it into a round pavlova shape with a slight indentation in the center.

Bake in the preheated oven for 1 hour 30 minutes, or until the pavlova is crispy on the outside and still slightly soft on the inside.

Remove from the oven and let it cool completely on the baking sheet.

In a separate bowl, mix the diced pineapple, grated ginger, and powdered sugar together.

Once the pavlova is cooled, gently remove it from the parchment paper and transfer it to a serving plate.

Fill the center indentation of the pavlova with the pineapple and ginger mixture.
