Ingredients

  • 200g shortcrust pastry
  • 75g golden syrup
  • 75g black treacle
  • 75g butter
  • 2 pieces of stem ginger, finely chopped
  • Zest of 1 lemon
  • 2 eggs, beaten

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Roll out the shortcrust pastry and line a 9-inch tart tin. Prick the base with a fork.

  3. In a saucepan, heat the golden syrup, black treacle, and butter until melted and well combined.

  4. Stir in the chopped stem ginger and lemon zest.

  5. Allow the mixture to cool slightly before adding the beaten eggs. Stir well.

  6. Pour the filling into the pastry case and spread it evenly.

  7. Bake in the preheated oven for 40 minutes, or until the tart is golden and set.

  8. Allow the tart to cool before serving.
