  • 1 pre-made pie crust
  • 1 cup treacle or dark corn syrup
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup rum
  • 1/2 cup desiccated coconut
  • 2 eggs, lightly beaten

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Place the pie crust in a 9-inch tart pan and set aside.

  3. In a mixing bowl, combine the treacle or dark corn syrup, melted butter, sugar, rum, desiccated coconut, and eggs. Mix until well combined.

  4. Pour the mixture into the prepared pie crust.

  5. Bake in the preheated oven for 40-45 minutes or until the filling is set and the crust is golden brown.
