Ingredients

  • 1 sheet of frozen puff pastry, thawed
  • 5 slices of bacon, cooked and crumbled
  • 2 cups fresh spinach, chopped
  • 1/2 cup Roquefort cheese, crumbled
  • 1/2 cup heavy cream
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry and press it into a tart mold.

  3. Prick the bottom of the pastry with a fork and blind bake it for 10 minutes.

  4. In a skillet, sauté the spinach until wilted.

  5. In a bowl, whisk together the eggs, cream, salt, and pepper.

  6. Spread the spinach evenly over the baked pastry.

  7. Sprinkle the crumbled bacon and Roquefort cheese over the spinach.

  8. Pour the egg mixture over the tart.

  9. Bake in the preheated oven for 25 minutes, or until the tart is golden and set.

  10. Allow the tart to cool slightly before serving.
