Ingredients
- 1 sheet of frozen puff pastry, thawed
- 5 slices of bacon, cooked and crumbled
- 2 cups fresh spinach, chopped
- 1/2 cup Roquefort cheese, crumbled
- 1/2 cup heavy cream
- 2 eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions

Preheat the oven to 375°F (190°C).

Roll out the puff pastry and press it into a tart mold.

Prick the bottom of the pastry with a fork and blind bake it for 10 minutes.

In a skillet, sauté the spinach until wilted.

In a bowl, whisk together the eggs, cream, salt, and pepper.

Spread the spinach evenly over the baked pastry.

Sprinkle the crumbled bacon and Roquefort cheese over the spinach.
