Ingredients
- 2 pears, peeled and sliced
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/4 cup water
- 1 sheet puff pastry
- 1/2 cup Roquefort cheese, crumbled
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
Instructions

Preheat the oven to 400°F (200°C).

In a skillet, melt the butter over medium heat. Add the brown sugar and water, stirring until the sugar has dissolved.

Add the sliced pears to the skillet and cook for 3-4 minutes, until they start to soften.

Roll out the puff pastry and cut into four squares. Place the squares on a baking sheet lined with parchment paper.

Spoon the caramelized pears onto each puff pastry square, leaving a border around the edges.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed up.

While the tarts are baking, prepare the Roquefort cream. In a small bowl, combine the Roquefort cheese, heavy cream, and powdered sugar. Mix until smooth.

Remove the tarts from the oven and let them cool for a few minutes. Serve warm with a dollop of Roquefort cream.
