Serves:
Ingredients
- 1 ½ cups of all-purpose flour
- ¼ cup of unsweetened cocoa powder
- ¼ cup of powdered sugar
- ½ cup of unsalted butter, cold and cubed
- 1 egg yolk
- 1 jar of caramel sauce
- ½ cup of roasted pistachios
- 2 tablespoons of granulated sugar
- ¼ teaspoon of sea salt
- ½ cup of heavy cream
- 1 tablespoon of rum
Instructions
-
Preheat the oven to 350°F (175°C).
-
In a food processor, combine the flour, cocoa powder, and powdered sugar. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and continue to pulse until a dough forms.
-
Press the dough into a tart pan, covering the bottom and sides evenly. Prick the bottom with a fork.
-
Bake the tart crust for 15 minutes, then remove from the oven and let it cool.
-
Once cooled, spread the caramel sauce evenly over the tart crust.
-
In a small bowl, toss the pistachios with the granulated sugar and sea salt. Spread them out on a baking sheet lined with parchment paper and bake for 10 minutes, or until the sugar has caramelized. Let them cool completely.
-
In a separate bowl, whip the heavy cream until soft peaks form. Fold in the rum until well combined.
-
Serve the double chocolate & caramel tart with frosted pistachios sprinkled on top and a dollop of the rum cream.
