Ingredients

  • 200g oats
  • 100g almond flour
  • 50g coconut oil
  • 4 tbsp honey
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tbsp golden syrup
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • Whipped cream or ice cream, for serving (optional)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a food processor, blend the oats and almond flour until you get a fine mixture.

  3. Melt the coconut oil and mix it with the honey, lemon zest, lemon juice, golden syrup, vanilla extract, and salt.

  4. Combine the dry mixture with the wet mixture and mix well until it forms a sticky dough.

  5. Press the dough evenly into a greased tart pan, making sure to create an even layer on the bottom and up the sides.

  6. Bake in the preheated oven for 15-20 minutes, until the crust is golden brown.

  7. In the meantime, heat the golden syrup in a small saucepan until it becomes runny.

  8. Once the crust is baked, remove it from the oven and pour the golden syrup over the crust, spreading it evenly.

  9. Return the tart to the oven and bake for an additional 10 minutes until the syrup is bubbly.

  10. Allow the tart to cool before serving. Serve with whipped cream or ice cream, if desired.
