  • 1 9-inch pre-made pie crust
  • 2 cups rhubarb, sliced
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Whipped cream, for serving

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the pie crust into a 9-inch tart pan and press it firmly against the bottom and sides.

  3. In a medium-sized bowl, mix together the rhubarb, sugar, and cornstarch.

  4. Spread the rhubarb mixture evenly onto the prepared crust.

  5. In a separate bowl, whisk together the milk, eggs, and vanilla extract.

  6. Pour the custard mixture over the rhubarb in the tart pan.

  7. Bake for 40-45 minutes, or until the custard is set and the crust is golden brown.

  8. Allow the tart to cool completely before serving.

  9. Serve slices of the tart with a dollop of whipped cream.
