Ingredients

  • 1 sheet of refrigerated pie crust
  • 2 cups of fresh rhubarb, chopped
  • 1 cup of sugar
  • 3 tablespoons of cornstarch
  • 1/2 teaspoon of vanilla extract
  • 2 eggs
  • 1 cup of milk

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Roll out the pie crust and press it into a tart pan.

  3. In a mixing bowl, combine the chopped rhubarb, sugar, and cornstarch. Mix well.

  4. In a separate bowl, whisk together the eggs, milk, and vanilla extract.

  5. Pour the egg mixture over the rhubarb mixture and stir until well combined.

  6. Pour the filling into the prepared pie crust.

  7. Bake for 45 minutes, or until the custard is set and the crust is golden brown.

  8. Remove from the oven and let it cool before serving.
