Ingredients
- 1 store-bought pie crust
- 2 cups of rhubarb, chopped
- 1 cup of sugar
- 1/4 cup of cornstarch
- 1 cup of milk
- 3 egg yolks
- 1 tsp of vanilla extract
- 4 egg whites
- 1/4 cup of sugar
Instructions

Preheat the oven to 375°F (190°C).

Place the pie crust into a tart pan and press it firmly against the sides and bottom.

In a saucepan, combine the rhubarb, sugar, and cornstarch. Cook over medium heat until the mixture is thickened and the rhubarb is tender.

In a separate saucepan, heat the milk until hot but not boiling.

In a mixing bowl, whisk together the egg yolks and sugar until well combined. Gradually whisk in the hot milk.

Return the custard mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens. Remove from heat and stir in the vanilla extract.

Pour the custard into the tart crust and spread it evenly.

In a clean mixing bowl, beat the egg whites until stiff peaks form. Gradually add the sugar, beating well after each addition.

Spoon the meringue over the custard, making sure to seal it to the edges of the crust.

Bake the tart in the preheated oven for 15-20 minutes, or until the meringue is golden brown.

Remove from the oven and let it cool before serving.
