  • 2 cups rhubarb, diced
  • 1/4 cup granulated sugar
  • 1 tsp cornstarch
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, cold and diced
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup cold water

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. In a medium bowl, toss the diced rhubarb with the granulated sugar and cornstarch until well coated. Set aside.

  3. In a separate bowl, combine the all-purpose flour, rolled oats, brown sugar, butter, cinnamon, and salt. Use your fingers or a fork to mix until the mixture resembles coarse crumbs.

  4. Roll out the puff pastry into four equal-sized rectangles on a lightly floured surface. Place each rectangle on the prepared baking sheet.

  5. Spoon the rhubarb mixture onto the center of each puff pastry rectangle, leaving a small border around the edges.

  6. Sprinkle the oaty streusel topping evenly over the rhubarb mixture on each rectangle.

  7. Fold the edges of the puff pastry over the filling, creating a rustic tart shape.

  8. Brush the edges of the pastry with cold water.

  9. Bake in the preheated oven for approximately 25 minutes or until the pastry is golden brown and the rhubarb is bubbling.
