How To Make Rhubarb Puffs with Oaty Streusel Topping

- 2 cups rhubarb, diced
- 1/4 cup granulated sugar
- 1 tsp cornstarch
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, cold and diced
- 1/4 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup cold water
Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a medium bowl, toss the diced rhubarb with the granulated sugar and cornstarch until well coated. Set aside.

In a separate bowl, combine the all-purpose flour, rolled oats, brown sugar, butter, cinnamon, and salt. Use your fingers or a fork to mix until the mixture resembles coarse crumbs.

Roll out the puff pastry into four equal-sized rectangles on a lightly floured surface. Place each rectangle on the prepared baking sheet.
