How To Make Mustard Chicken with Winter Vegetables

Ingredients
- 4 chicken breasts
- 4 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups mixed winter vegetables (carrots, parsnips, Brussels sprouts), peeled and cut into chunks
Instructions

Preheat your oven to 400°F (200°C).

In a small bowl, mix together the Dijon mustard, honey, olive oil, dried thyme, salt, and black pepper.

Place the chicken breasts on a baking sheet and brush them with the mustard mixture, coating both sides.

Toss the winter vegetables with olive oil, salt, and pepper, then spread them around the chicken on the baking sheet.

Roast in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
