How To Make Gooseberry Bakewell Pies

Ingredients
- 1 cup gooseberries
- 1/4 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ground almonds
- 1/4 cup granulated sugar
- 1 egg
- 1/2 tsp almond extract
- 1/4 cup flaked almonds
Instructions

Preheat the oven to 375°F (190°C) and grease four individual pie dishes.

In a saucepan, combine the gooseberries and sugar. Cook over medium heat until the gooseberries have softened and released their juices, about 5 minutes. Remove from heat and set aside.

In a large mixing bowl, combine the flour and butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.

Stir in the ground almonds and sugar. Add the egg and almond extract, then use your hands to bring the mixture together into a dough.

Divide the dough into four equal portions. Roll each portion out on a lightly floured surface to fit the pie dishes. Press the dough into the dishes and trim any excess.

Fill each pie dish with the cooked gooseberries, then sprinkle the flaked almonds on top.

Place the pies on a baking sheet and bake for 20-25 minutes, or until the crust is golden and the filling is bubbling.
