How To Make Lemon Butter Tarts

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- Pinch of salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup fresh lemon juice
- 2 teaspoons lemon zest
- Powdered sugar, for dusting
Instructions

Preheat the oven to 350°F (175°C) and grease 4 individual tart pans.

In a food processor, combine the flour, cold butter, granulated sugar, and salt. Pulse until the mixture resembles coarse crumbs.

Add 1 egg at a time and pulse until the dough comes together. Divide the dough into 4 equal portions, then press each portion evenly into the bottom and up the sides of the tart pans.

In a mixing bowl, whisk together the granulated sugar, melted butter, lemon juice, lemon zest, and remaining egg.

Pour the lemon filling into the prepared tart pans, filling them about 3/4 full.

Bake for 25 minutes or until the tarts are set and lightly golden brown.

Allow the tarts to cool in the pans for 10 minutes, then carefully remove them from the pans and transfer to a wire rack to cool completely.

Dust the tarts with powdered sugar before serving.
