Ingredients

  • 1 sheet of puff pastry
  • 4 ripe apricots, sliced
  • 1 cup of fresh raspberries
  • 1/4 cup of sugar
  • 1 tbsp of cornstarch
  • 1 tbsp of lemon juice
  • 1 tbsp of melted butter
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the puff pastry sheet and place it onto a baking sheet lined with parchment paper.

  3. In a bowl, mix together the sliced apricots, raspberries, sugar, cornstarch, and lemon juice.

  4. Arrange the fruit mixture onto the puff pastry, leaving a border around the edges.

  5. Fold the edges over the fruit to create a rustic tart shape.

  6. Brush the melted butter over the edges of the pastry.

  7. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and the fruit is soft.

  8. Remove from the oven and allow to cool slightly.

  9. Dust with powdered sugar before serving.
