Ingredients

  • 1 pre-made pie crust
  • 1 cup apricot puree
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Roll out the pie crust and press it into a 9-inch tart pan. Trim any excess crust.

  3. In a medium bowl, whisk together the apricot puree, heavy cream, sugar, egg yolks, and vanilla extract until well combined.

  4. Pour the apricot mixture into the prepared tart crust.

  5. Place the tart on a baking sheet and bake for 40 minutes, or until the custard is set and golden.

  6. Remove from the oven and let cool completely before refrigerating for at least 2 hours to set.

  7. Just before serving, sprinkle a thin layer of granulated sugar over the top of the tart. Use a kitchen torch to caramelize the sugar until it forms a golden crust.

  8. Slice and serve.
