How To Make Vanilla Jellies with Apricot & Raspberry Compote

Ingredients
- 2 cups apricots, pitted and diced
- 1 cup raspberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- 2 gelatin sheets
- 1 cup water
- 1/2 cup sugar
- 1 tsp vanilla extract
Instructions

In a saucepan, combine the apricots, raspberries, sugar, and lemon juice. Cook over medium heat until the fruits break down and the mixture thickens. Set aside to cool.

In a small bowl, soak the gelatin sheets in cold water for about 5 minutes.

In a separate saucepan, heat the water and sugar until the sugar dissolves. Remove from heat.

Squeeze the excess water from the gelatin sheets and add them to the sugar syrup. Stir until the gelatin is completely dissolved.

Stir in the vanilla extract.

Pour the gelatin mixture into individual serving molds or glasses. Refrigerate for at least 2 hours, or until set.

Serve the vanilla jellies with the apricot and raspberry compote spooned over the top.
